Burrata with Marinated Tomatoes
Creamy, torn burrata is topped with juicy tomatoes marinated in olive oil and balsamic.

good quality extra-virgin olive oil

white balsamic vinegar
plain balsamic will also work! I like the white for color

tsp
kosher salt

freshly ground pepper

cherry tomatoes

tbs
basil
sliced into thin ribbons

burrata
Instructions
Combine olive oil, balsamic vinegar, salt and pepper in a medium bowl.
Halve tomatoes and toss with oil & vinegar mix. Let sit for about 30 minutes. Add basil and toss.
Tear burrata into pieces and arrange on plate. Spoon marinated tomatoes on top and top with more freshly ground pepper and basil, if desired.
